The vineyard is planted on terrace system , on marginal, shallow soil, which requires an extra effort from the vines, expressed in a smaller grape size, rich in concentrated flavors and aromas. Wine Production Process: The Merlot grapes arrived at the winery at dawn, after a mechanical harvest. Following a gentle crushing, the crushed Merlot grapes (mesh)were pumped into a temperature control, stainless steel tank for cold soaking, prior to the beginning of the alcoholic fermentation, for two days. Thereafter the temperature was raised up , yeast were added and the alcoholic fermentation started at a temperature of 28C, while applying different spraying regimens to extract the flavors, aromas and color from the grape skins. After 6 days, at the end of the alcoholic fermentation, the wine continued macerating on the skins for additional four days. Then the free wine was ? and the wet skins were pressed slowly, at low pressure to a stainless steel tank for the malolactic fermentation, to stabilize and mellow the wine. At the end of the malolactic fermentation, the wine has been aged for 14 months in our barrel cellar in new French oak barrels and second year barrels,. After the end of the barrel maturation the wine was pumped out. Additional four months of bottle aging was carried out after bottling. before its release to the market. Description of the Wine: Full, powerful and deep colored wine, with rich aromas of ripe red fruit, spices, caramel and French oak. On the palate, the wine is full, soft bodied, balanced, with a long good finish. Wine characteristics: The wine balances fruit and wood flavors. A complex wine with aromas Consumption: From release of the wine to the market, yet it will improve very nicely over the next three years. Serving Suggestion: At a temperature of 18C with mallard breast or full and strong cheeses. |
