General Information:

Grape origin: The Cabernet Sauvignon grapes were harvested from a vineyard situated along a hilly, rocky slope near the highest of the Judean Mountains, at an elevation of 600 meters above sea level. The vineyard was planted upon terraces in moderately deep soil, necessitating a special effort on the vines which is expressed in small-sized berries rich in concentrated tastes and aromas.
Harvest: Hand-picked in the early morning hours.
The wine production process: The Cabernet Sauvignon grapes arrived at the winery in the morning hours following hand-picking. After being delicately crushed, the grapes were transferred to a chilled stainless steel tank for two days of cold soaking. Then, after raising the temperature, alcoholic fermentation proceeded at a temperature of 29 C. under different pomp over regimens in order to extract the finest tastes, aromas and color of the grape skins. Upon the end of alcoholic fermentation, the wine was soaked on skins for four days after it, we squeezed the grapes slowly and under low pressures. The wine was transferred to a stainless steel tank in order for malolactic fermentation to begin so as to stabilize and soften the wine.
When malolactic fermentation ended, the wine was transferred to new barrels made of French oak and second-year barrels to mature for 14 months. After bottling, the wine was bottle age for another three months before being released to market.
Description of the wine: The wine has a rich, full red color with rich aromas of black berries, cassis, coffee and roasted French oak. On the palate, the wine is pleasant, soft, full bodied and balanced, with tastes of dry fruit and a soft tannin structure. The aftertaste is long and satisfying.
Drinking time: upon wine's release to the market, however the wine will develop very nicely in coming years.
Suggested serving temperature: 18 C.
Suggested to accompany: chunky casseroles or meat in thick sauce.
