The 2007 Yarden Cabernet Sauvignon Yonatan Vineyard aged for 18 months in French oak barrels, adding to its overall complexity. The wine layers ripe cherry, blackberry and black currant fruit characters with hints of dark chocolate, fertile earth, aromatic oak and a touch of herb. This complex single vineyard Cabernet combines richness with elegance.

The 2007 Yarden Cabernet Sauvignon Yonatan Vineyard is made entirely from fruit grown in the Yonatan Vineyard, which is located in the central Golan Heights at elevations between 600-700 meters (2,000-2,300 feet) above sea level. Yonatan has proven to be an excellent site for Cabernet since its first planting in 1978.

Though enjoyable while still relatively young, the 2007 Yarden Cabernet Sauvignon Yonatan Vineyard is best appreciated after aging for a number of years, and will remain in excellent drinking condition for a decade and more. Try accompanying the wine with pasta topped with wild mushrooms, caramelized onions and reduced beef stock, or a roast shoulder of lamb.

The 2007 Yarden Cabernet Sauvignon Yonatan Vineyard was released in a limited edition of 12,500 bottles only.
